Teriyaki Bacon Pineapple Rings

Bacon-wrapped pineapple is a pretty standard bacon recipe these days. And what’s not to love about a sweet, juicy piece of fruit wrapped with a piece of salty, delicious bacon? It’s just a fantastic combination. I hosted a family BBQ the other day and served teriyaki-marinaded skirt steak for the main dish. Teriyaki has always been a favorite among my family, and it reminded me just how versatile a Teriyaki marinade can be. I thought why not combine these two things together to give bacon-wrapped pineapple a much needed upgrade.

I knew before I made these that they would be good, but, oh man, did I underestimate just how amazing they would be. Once I was done snapping pictures, I sat down and ate the whole plate. They were SO good. I told myself that the next time I want to make burgers, I need to top them with these Teriyaki Bacon Pineapple Rings along with some guacamole or a few pieces of tempura-fried avocado.



1 can sliced pineapple (about 8 slices)
8 slices of thin-cut bacon, uncooked
1 cup soy sauce
1/4 cup sugar
1/2 cup green onion, chopped
2 tsp. sesame oil
3 Tbsp. sesame seeds
1 garlic clove, finely chopped


1. Stack two pineapple rings on top of each other, then carefully wrap them with bacon, stretching the strips if needed. It took 2 pieces of bacon to wrap around the whole ring. Repeat with the whole can of rings, this should get you 4 complete pieces.

2. Whisk together remaining ingredients to make a teriyaki marinade. Pour the marinade over the rings in an airtight container and refrigerate for 30 minutes to an hour.

3. Remove the rings from the marinade and barbecue on the grill over medium-low heat until the bacon is cooked and crispy on both sides. Cool for a couple minutes, then eat them up!
