Red Hot Bacon Blue Cheese Dip

With the Super Bowl just a couple weeks away, I’m getting excited about making tasty snacks for the big game. I’m not a big sports fan at all, but I am a fan of eating, which makes Super Bowl Sunday one of my favorite days. What’s not to like about hanging around with friends eating finger foods all afternoon long? Sounds like a perfect day to me!

When I was thinking about how to give a simple blue cheese dip a flavor upgrade, I couldn’t help but think of my husband’s obsession with hot sauce. I wasn’t exactly sure where I was going with this recipe, but I knew I had to throw in some Frank’s Red Hot Sauce, and of course, a pile of bacon.

So, lo and behold, this interesting combination of ingredients was born and mashed together into a bowl. The creaminess of the blue cheese and buttermilk complement the salty, crispiness of the bacon in a really nice way. The red onions and Frank’s Red Hot Sauce give just enough tangy spice to add a nice layer of flavor on top of all that goodness.

This dip can be make a few days in advance, so you don’t have to work too hard on game day. You can pretty much serve it with anything you want like pretzels, potato chips, veggies or even buffalo wings. Heck, cook up some extra slices of bacon and dunk those in there, too.


Red Hot Bacon Blue Cheese Dip Ingredients

5 Tbsp. finely-chopped red or sweet onion*
1 Tbsp. olive oil
2-3 Tbsp. Frank’s Red Hot Sauce
1 tsp. sugar
1/3 cup buttermilk
1/2 cup sour cream
1/3-1/2 cup cooked bacon, finely chopped
2 Tbsp. chopped fresh chives
1/2 cup crumbled blue cheese
Pinch of kosher salt plus more
Freshly ground black pepper


Red Hot Bacon Blue Cheese Dip Directions:

Heat olive oil in a small skillet over medium high heat. Cook onions until they start to become translucent, then set aside. Note: Red onions will give this dip a strong, tangy flavor. If you’d like a more subtle flavor, try using sweet onions instead.

In a medium bowl, whisk buttermilk, sour cream, Frank’s Red Hot Sauce, sugar until smooth. Fold in chopped onions, bacon, chives, and blue cheese until incorporated. Season with salt and pepper.

Cover dip and refrigerate for an hour so the flavors can mingle and get to know each other.
