Recipe Video: Chicken, Bacon & Swiss Cheese Melt
In this video, Bacon Freak founder Rocco Loosbrock shows you how to make a chicken, bacon and swiss cheese grilled cheese sandwich. For those who don’t care at all about how many calories or how much fat they consume, this is the perfect sandwich! Its over-the-top, downright deliciousness will impress those lucky enough to attend your barbecue or dinner party. Gather up these ingredients and follow along with Rocco in the video below. Enjoy!
4 slices bacon
3 skinless, boneless chicken breast halves OR sub sliced deli chicken
1 teaspoons poultry seasoning
2-4 slices swiss cheese
4 slices sourdough bread (or bread of choice)
1/4 cup thinly sliced, grilled sweet onions (optional)
2 tbsp. BBQ sauce (optional)
2 tbsp. butter
Preheat a grill for medium heat. While the grill preheats, place the bacon in a large skillet over medium-high heat. Cook until browned on both sides. Remove from the pan, and drain on paper towels.
Using the bacon grease in the skillet, grill your onions over medium-low heat until soft. drain and set aside. Keep grease in the skillet.
Rub the poultry seasoning onto the chicken pieces, and place them on the grill. Cook for about 6 minutes per side, or until no longer pink in the center.
Butter your bread on both sides. Place warm chicken breast on top of one piece of bread. Top each piece of chicken with 2 slices of bacon (you can cut them in half to fit better), half of the grilled onions, 1 tbsp bbq sauce, and 1 slice of swiss cheese. Top with the other piece of bread.
Warm your skillet back to medium heat and place your sandwich in the warm oil. Grill until bread in golden brown, then flip the sandwich. Grill the other side until golden brown and cheese is melted. Cut in half and serve.
