Are you looking for something amazingly tasty to warm yourself up from the upcoming onslaught of frigid, stormy, wet and cold weather? Of course, it better be simple, easy, quick to make, absolutely delicious and feature some gourmet bacon in the make-up of this wonderful winter weather meal.
How about trying something new, like Black Rice “Jook,” topped with premium, country cut bacon, a poached egg and a little bit of gourmet hot sauce?
Jook, is a delightfully delicious, thin rice porridge that is popular throughout much of Asia, which, as well as being a popular taste treat and tummy warmer, is also considered both a comforting and restorative food, in the same way that “Homemade Chicken soup” is so prevalently considered a “restorative” here in the west.
Also, it seems, there is an additional health benefit to the recipe, for those who perhaps indulge just a little too emphatically in a night out drinking. As a matter of fact, certain counties in Asia, such as Thailand, claim it prevents hangovers and there actually are street stalls selling it in the middle of the night, as people are heading home from the bars.
3 cup homemade chicken stock.
3 slices of bacon pre-cooked to preferred crispiness.
2/3 cup cooked black (forbidden) rice.
1 pre-poached egg.
½ fresh cut lemon.
½ fresh cut lime.
2 splashes of gourmet salsa or hot sauce.
2 dashes of soy sauce.
1 splash of toasted sesame oil
1/8th tsp of crushed red pepper flakes.
Place 2/3 cup of cooked rice into a pot.
Add in 3 cups of homemade chicken stock
Allow the mixture to simmer gently until the mixture has become uniformly thick and the individual grains of rice have all but vanished.
Ladle the mixture it into a soup bowl
Top with your pre-poached egg and 3 pre-cooked slices of bacon.
Now accessorize to taste with your hot sauce or salsa, lemon and lime juice, soy sauce, toasted sesame oil, and red pepper flakes.
