Green Guinness® Beer-Battered Bacon

1 package thick-cut bacon
7 oz. Guinness® Draught Beer
1 ½ cups flour
1 heaped Tbsp. baking powder
1 tsp. salt
¼ tsp. pepper
1/2 tsp green liquid food coloring

Line an edged baking sheet with foil. Lay the bacon strips on the sheet, then place in the oven. Heat the oven to 375° F and cook for 13 minutes. When done, transfer to paper towel-lined plate to drain excess grease. You can cut the bacon into smaller pieces if you’d like.

Heat 2-3 inches of oil in a deep fryer or skillet to 350° F.

Pour beer into a mixing bowl, then whisk in the flour, baking powder, salt, pepper, and green food coloring until smooth and frothy. Let the batter sit for 15 minutes.

Cut each strip in half, then coat each piece in the batter. Fry for about 2-4 minutes, turning once halfway. Place cooked pieces onto a cooling rack or another paper towel-lined plate. Serve warm with GUINNESS® Draught Beer Glaze.

Guinness® Draught Beer Glaze:
7oz of Guinness® Draught
2/3 cup dark brown sugar, packed
1/4 cup honey

Pour all ingredients into a medium saucepan and combine with a whisk. Bring to a boil. Reduce heat to medium and simmer for about 25 minutes or until reduced to half of original amount.
Glaze will thicken as it cools.
