Not Meatloaf Again!
This flavorful recipe will stop the chant of “not meatloaf again”! The chipotle flavor in the meatloaf is a great enhancement. The chipotle bacon that tops the meatloaf is the proverbial icing on this tasty meat cake.
This pound of chopped beef, go sirloin if you are feeling extravagant, had just enough room for three of these thick meaty slices of gourmet chipotle rubbed bacon. My dillemma? Cutting this loaf into four slices… someone was going to pull the shortest straw. Or in this case, the baconless slice.
I could tell you that this meatloaf makes an awesome meatloaf sandwich on ciabatta roll with a slice of pepper jack cheese on top, but leftovers of this meatloaf are unlikely. Just too darn good!
- 1/2 pound bacon
- 3-4 slices chipotle rubbed bacon
- 1/2 cup whole oats
- 1/2 tsp cayenne
- 1/2 tsp chili powder
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 onion, chopped
- 1-2 cloves garlic, chopped
- 1/4 bell pepper, chopped
- 1 pound ground beef
- 1 tsp salt
- 1 egg
- 1/4 cup ketchup
- 1/4 cup mayonnaise
- 1 tsp cumin
- 1 TBS Worcestershire sauce
- 2 chipotle peppers in adobo sauce, finely chopped
- 1 TBS adobo sauce
- 1 TBS honey
Cook the 1/2 pound of bacon until the fat starts to render but bacon is not yet crispy. Chop the lightly cooked bacon into bits.
Preheat oven to 350° F.
To make the meat loaf, combine in a food processor or blender the whole oats, black pepper, cayenne pepper, chili powder and thyme. Pulse until it reaches a fine texture. Place in a bowl and set aside.
Combine onion, garlic and bell pepper in the food processor. Pulse until fine, but not pureed.
Mix together the chopped vegetables, chopped partially cooked bacon and the ground beef. Next mix in the oatmeal mixture. Then add the chipotle sauce* and salt, finally add the egg and mix well. When the meat is well mixed, form into a loaf on a foil-lined baking sheet. Top with slices of chipotle bacon**.
Bake the loaf at 350°F. until the internal temperature reaches 155°F. about 45-50 minutes. Let it rest for 5-10 minutes before slicing.
Double the chipotle sauce recipe if you want a sauce to go with the meatloaf, either on the side or poured on top of the meatloaf after it is cooked. The sauce is very tasty.
