Look at that bacon. It’s perfect. Lean, perfectly shiny and the color of a smoggy sky at sunset. The flaky croissant was light and airy. The sauteed mushrooms brought a necessary tang to the plate. But the bacon, oh the bacon.
Bacon like that only comes along once in a great while. Crisp to the bite, with just a touch of chewiness for that tear-it-like-an-animal effect. Meat-to-fat ratio, approximately 4:1.
