Dave Peterson, proprietor of the Corralitos Market & Sausage Company, called in the fire department to save his bacon on September 16th of this year.
One of the four smokehouses behind his Corralitos, CA store caught fire and damaged a portion of his inventory.
“The bacon’s shot but all the sausage is good,” Mr. Peterson told reporters.
We mourn your loss Mr. Peterson. Its sad to lose such good bacon but we’re just glad your store is still ready to serve up that famous meat.
The Corralitos Market & Sausage Co. is open Monday through Saturday from 8:00 a.m.-6:00 p.m., and every Sunday from 9:00 a.m. To 5:00 p.m.
This is a horrible event and a tragic loss of bacon, but I am very glad the store is still up and running. My only solace is that at least the sausage was was saved and it wasn’t a total loss.

I grew up on the bacon (and cheesy bavarian sausage) smoked at this joint and my goodness is it delicious. I’ll pour one out (and by “one”, I mean a martini made with bacon-infused vodka) for this tragic loss.
What a coincidence that I hit the site the same day my home town is featured on the homepage. The Corralitos Market is famous in the area for their sausages, steaks and (apparently) bacon. I can highly recommend their marinated skirt steaks and their chicken is outstanding. I will have to give their bacon a try the next time I am down in the central coast.
