Bacon Ginger Snap Cookies

This smoky sweet cookie combines rendered bacon fat and shortening. Using an ingredient you often throw away to bring a unique flavor to this old favorite is a win-win in my book.  Combine this smoky sweet cookie with an ice-cold glass of milk, and this snack hits the spot!

You will see that this recipe calls for rendered bacon fat. Rendered bacon fat is simply the fat from the bacon that ends up in the pan after you’ve cooked your bacon. But honestly, I read this article on rendered bacon fat after I simply poured off the fat from oven-baked bacon.  Perhaps rendered bacon fat by any other means is simply, rendered bacon fat.

 

Bacon Ginger Snap Cookies

Ingredients

  • 1/2 cup rendered bacon fat
  • 1/4 cup shortening
  • 1 cup granulated sugar
  • 1/4 cup corn syrup
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2 tsp baking soda
  • 2 tsp ground ginger (or more to your taste)
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon

Instructions

Preheat oven to 350 degrees F.

Cream the fat and the sugar in a mixer, then add the egg. Once thoroughly mixed slowly add the remainder of the ingredients to the mixture. Continue to mix until a dough forms. You can refrigerate the dough for an hour or so to make the dough easier to handle. Form and place 1 inch dough balls onto a cookie sheet sprayed with a non-stick spray. Leave 2 inches between each cookie as they will spread out as they cook. Use the tines of a fork to flatten slightly the dough balls on the cookie sheet. Bake for 6 to 8 minutes. Remove from the cookie sheet and cool on a rack.
