Here’s the next recipe in our series of Bacon Summer Side Dishes: Bacon Baked Beans!

Is there anything better than a bowl of homemade baked beans that have been cooking in a crockpot or Dutch oven all day long? Actually, there is something better. How about baked beans that cooked in an hour and achieved a level of flavor that is usually achieved after days of cooking and prepping? That sounds better, doesn’t it!

This quick and easy recipe adapted from “Add a Pinch” will take only an hour to whip up. Let’s face it–not many of us have the time to spend two days making beans. Especially during summer when the warm weather is a strong argument for spending as little time in the kitchen as possible.

These beans have a rich, sweet and savory flavor that truly taste as if they cooked all day. We increased the amount of bacon so they pack an extra meaty bacon punch.  This recipe is perfect for a family gathering, BBQ, potluck or work function. It will double easily to feed a hungry crowd. The bourbon can be omitted if desired. You could also serve these high protein beans as a main dish with a green salad. Pairs wonderfully with a brown or red ale.

Total prep and cook time: 1 hour. Makes 8 side dish servings.

– Two 16 oz. cans great northern or navy beans
– 1 pound of bacon (about 10-12 slices)
– 1-2 cloves garlic, minced
–  ½ medium sweet onion, diced
– 1 tablespoon Worcestershire sauce
– ¼ cup unsulphured molasses
– ¼ cup dark brown sugar
– ¼ cup ketchup
– ¼ cup bourbon
– 1 teaspoon prepared yellow mustard
– 2 tablespoons light brown sugar

1. Preheat oven to 325º F.

2. Empty beans into a colander and rinse well with water. Pour the rinsed beans into a medium stockpot or small Dutch oven.

3. Chop half of the bacon into chunks. In a medium skillet over medium heat, add chopped bacon and onion. Cook for a few minutes, then add garlic. Continue cooking until bacon is crisp and onion is tender. Remove from heat and add to beans.

4. Add Worcestershire sauce, molasses, brown sugar, ketchup, bourbon and yellow mustard. Stir until smooth. Add to beans and garlic/onion mixture. Stir to combine. Cover beans with remaining bacon strips and sprinkle the brown sugar over the bacon.

5. Place in oven and bake for 45 minutes. Increase temperature to 425º F for 5-10 minutes to crisp bacon. Remove from oven and allow to rest 10 minutes before serving.
