It’s Autumn! For many people, that means it’s time to bust out the roasted veggie recipes. If you’ve never tried roasting a vegetable, you don’t know what you’re missing! Many vegetables that are barely tolerable suddenly become delicious when they are roasted. And adding bacon ensures that you will get the fussiest eater to start eating their veggies.

We’ve got two fabulous roasted veggie recipes that are made better with bacon. The first is Curried Roasted Cauliflower with Bacon. If you don’t like the taste of curry, simply omit it and roast the cauliflower with olive oil, salt and pepper. But, if you dare to try it, you’re in for a pleasant surprise. The spicy, smoky flavor of curry powder perfectly complements savory bacon.

The second recipe is for those with a bit of a sweet tooth. Cinnamon, brown sugar and olive oil are tossed with cubes of butternut squash, then wrapped in bacon and baked in the oven. The crisp bacon and the softly roasted squash are a delicious flavor and texture combo. Make sure and give these little babies time to cool before you pop them in your mouth!

Curried Roasted Cauliflower with Bacon

Ingredients:

1 head of cauliflower
2-3 tablespoons olive oil
1 teaspoon curry powder
Salt and pepper to taste
6 slices cooked, chopped bacon

Directions:

1. Chop cauliflower into florets. Mix olive oil, curry powder (if using), and salt and pepper. Toss with florets.

2. Pre-heat oven to 425 F. Roast cauliflower for 20-25 minutes or until tender, turning halfway through to avoid
burning.

3. Top with crumbled, cooked bacon bits and serve.

Bacon-Wrapped Butternut Squash Bites

Ingredients:

1 bag cubed butternut squash (about a pound)*
1 teaspoon cinnamon
3 tablespoons dark brown sugar
4 tablespoons olive oil
1 pound bacon
Toothpicks that have been soaked in water

Directions:

1. Mix the olive oil, brown sugar, and cinnamon in a small bowl. Toss with cubed butternut squash.

2. Cut bacon strips into thirds. Wrap each segment around a cube of squash and secure with a toothpick. Place in a casserole dish.

3. Bake at 400 F for 20-25 minutes until bacon is crispy and squash is tender. You may need to switch to broil to get the bacon to brown evenly.
