Deep Fried BLT Bites

It’s pretty obvious that bacon is the ultimate food when it comes to versatility. If you can eat it, you can probably add bacon to it. It’s that simple. But often times when people think of bacon, they think of the tried and true BLT – and there’s nothing wrong with that! A good BLT will always be one of the best ways to enjoy bacon’s true flavors. So when International Bacon Day was inching its way up on the calendar, dedicating a recipe to that good ol’ BLT was a must. Naturally, deep frying came to mind. But deep frying a whole sandwich can be tricky and since bacon day is about celebrating and sharing our love of bacon with ALL bacon lovers, the BLT was turned into a shareable bite that’s not only fun to make, but irresistibly delicious. This recipe literally is amaze-balls and awesome sauce.

Deep Fried BLT Bites Ingredients

MAKES 24 BITES

For the Batter:
1 cup flour
3/4 cup cup water
1 teaspoon salt
1/2 teaspoon pepper
3 teaspoon baking powder
Oil for frying

For the Bites (Amaze-Balls!):
12 strips of bacon, cooked, cut in half
24 Grape Tomatoes, washed
1 head Romain Lettuce
24 Toothpicks

Honey Sriracha Mayo (Awesome Sauce!):
1/2 cup Mayo (or greek yogurt if you must)
1-2 tablespoons Sriracha Sauce
1 Tablespoon honey

Cook the bacon: I used Firecracker Chili Bacon for these to give them a hint of spicy flavor. Line a baking sheet with foil and lay out the bacon strips. Place in oven, then heat oven to 400 degrees. Bake until bacon just starts to brown and crisp, about 17-20 minutes depending on the thickness of the bacon. Do not over bake or it will be harder to wrap them around the tomatoes. Drain on paper towels, then cut in half.

Prepare the batter: Mix together flour, water, salt, and pepper. Whisk in the water until smooth. If the batter is too thick, add a little more water. Whisk in the baking powder. Set aside until ready to fry.

Make the mayo: Simply stir together all ingredients until well combined. You can use more or less of each ingredient to your taste. Refrigerate until ready to serve.

Prepare the lettuce: Pick off and wash 3-4 of the larger outer leaves of the lettuce. Slice the leafy part into 24 1-inch wide strips. Try to avoid using pieces that have a lot of spine as it makes it harder to wrap around the tomato. Pat them dry.

Assemble the bites: Take one tomato and wrap it with a piece of lettuce. Then wrap 1/2 piece of bacon around the lettuce, secure with a toothpick. Repeat with remaining tomatoes.

Deep-fry the bites: Heat up oil in a deep skillet over medium-high heat. Holding the toothpick, carefully dip each bite into the batter, spooning it over the top. I found that dipping the whole thing in will cause it to slide off the toothpick, but spooning the batter to cover the top worked just fine. Cook 2-4 at a time in hot oil until golden brown all around, flipping once (around 30 seconds per side). Transfer to paper towels to drain. Repeat with remaining bites.

Serve these tasty bites while they are warm with Honey Sriracha Mayo or any topping of your choice. Don’t know what to serve them with? I picked something that I would enjoy spread on a BLT sandwich.
