Bacon and Salted Caramel Milkshake
This recipe is from Santa Monica’s Pono Burger restaurant. Touted as one of Los Angeles’s best milkshakes, it combines vanilla ice cream, homemade salted caramel, and bacon. The salted caramel sauce is easy to whip up and doesn’t require a thermometer. This sweet, rich sauce can be used in other dessert recipes. Drizzle it over bacon brownies or add it to a homemade salted caramel frappucino.
This salty, sweet and savory dessert treat was created by Pono Burger’s head chef and owner, Windy “Makani” Gerardi. 1/4 cup Salted Caramel (see recipe below) + more for drizzling
3 scoops organic vanilla ice cream
3 teaspoons bacon bits (see recipe below)
Organic whipped cream, for topping
Add salted caramel, ice cream, and 2 teaspoons of bacon bits to a blender. Mix until combined.
Pour into a glass. Top with whipped cream, a drizzle of salted caramel, and remaining teaspoon of bacon bits.
3 cups organic sugar
1 cup water
2 1/2 cups organic heavy cream
1 teaspoon organic vanilla extract
1/2 teaspoon kosher salt
Add sugar and water to a heavy-bottomed pot. DO NOT STIR! Bring to a boil and cook until chestnut brown in color. Remove from heat, and being careful not to burn yourself, add cream, vanilla, and salt. Stir and let cool to room temperature before using.
1 pound bacon
Heat griddle to 425 degrees F. Place bacon on griddle and cook until crisp, using a bacon press.
Remove from griddle and cool thoroughly. Place bacon on a cutting board and chop until in crumbles.
