Potato Gnocchi with Bacon

8-10 Brussels Sprouts, cut in half length-ways
6 slices bacon, cut into 1” pieces
1 medium shallot, sliced thin
1 Tbl butter
2 1/2 cups cream
1/2-3/4 cup grated Parmesan cheese
1/2 tsp salt
1 tsp ground black pepper
1-2 Tbl gnocchi water
