Bacon Ricotta Stuffed Tomatoes
The other day, team bacon got a little hungry and made a delicious bacon lasagna, but somehow we ended up with a lot of leftover ricotta cheese. And what do you do when you have leftover cheese? Eat it, duh. That’s an easy answer, but the real question is how to eat it. These Bacon Ricotta Stuffed Tomatoes are super easy to prepare and are a great party pleaser. The creamy ricotta cheese combines nicely with basil to create a light snack that’s packed with protein and flavor. So next time you buy some ricotta cheese, get a little extra and make a batch of these juicy Bacon Ricotta Stuffed Tomatoes.
Yield: 24 Stuffed Tomatoes
1/4 cup bacon, cooked, finely chopped
24 large cherry tomatoes
3/4 cup ricotta cheese
1 tablespoon basil, fresh or dried
1/2 tsp salt
freshly ground black pepper
Cut tops of tomatoes and, using small paring knife, remove seeds. Using small spoon, fill each tomato with ricotta mixture. Sprinkle with pepper to taste.
Place stuffed tomatoes on baking sheet & bake for 8 minutes or until warmed through. Serve warm.
