The Bacon Elvisadilla
The combination of peanut butter and bananas in a sandwich is commonly known as “The Elvis” after the king of rock and roll. It’s not known for sure if Elvis enjoyed bacon with his peanut butter and bananas, but we sure would like to think he did. One story goes that Elvis ate his sandwiches with “caramelized bananas and crispy bacon on grilled Hawaiian bread, cooked in bacon fat.” Yummy! In our version, we’ve switched the Hawaiian bread for flour tortillas. The result is… the Elvisadilla? Okay, so he might not approve of the name, but we know he’d love the combination of bacon, banana, peanut butter and a drizzle of honey. It’s the perfect salty, savory and sweet snack. Enjoy!
The Bacon Elvisadilla Ingredients
2 flour tortillas
1/2 banana, sliced
2-3 bacon strips, cooked
1. Heat a pad of butter in a skillet over medium heat.
2. To assemble the “Elvisadilla”, spread some peanut butter on a tortilla then layer the banana slices and chopped bacon on top. Place the prepared tortilla in the buttered skillet.
3. Spread more peanut butter on the other tortilla and place peanut butter side down on top of the first tortilla. Spread a dab of butter on top of the tortilla.
4. Cook on both sides, carefully flipping, until the tortilla is crispy oon both sides and the filling is warm. Slices into wedges and drizzle with honey if desired.
