Recipe Video: Bacon Little Smokies in the Crock Pot
In this recipe video, Bacon Freak CEO Rocco Loosbrock shows you how to make bacon little smokies in the crock pot. This appetizer recipe is an all-time favorite and will feed a hungry crowd. Best of all, they are so easy to make thanks to the help of a crock pot or slow cooker. Make a lot of these little babies because they are gonna go fast! Gather up these ingredients and follow along with Rocco as he prepares little smokies in the crock pot.
Two 16 oz. packages miniature smoked sausage links
1 1/2 lbs. sliced bacon, cut crosswise into tiny pieces
2 medium yellow onions, diced small
3 garlic cloves, smashed and peeled
1/2 cup cider vinegar
1/2 cup packed dark-brown sugar
1/4 cup pure maple syrup
3/4 cup brewed coffee
1/4 cup grape jelly
1/3 cup barbeque sauce
1. In a large skillet, cook your bacon over medium-high heat, stirring occasionally until the bacon is lightly browned (about 15-20 minutes). Transfer bacon to paper towels to drain, and reserve all but 1 tbsp grease.
2. Grill your onions and garlic in the bacon grease for about 6 minutes or until onions are transparent. Add the vinegar, sugar, syrup, coffee, and bring to a boil. Be sure to scrape the browned bits. Cook for about 2 minutes. Add bacon and stir to combine. Transfer to a food processor, pulse until coarsely chopped.
3. Transfer your processed bacon mixture, grape jelly, and barbecue sauce into a 6-qt slow cooker and cooker on high, uncovered for 3.5-4 hours. One hour into cooking, add in the Smokies, mixing well so every smoky is emerged in the jelly mixture. Continue cooking for the remaining 2.5-3 hours.
4. Turn the heat down to the lowest setting and serve immediately.
