Bacon Doritos Biscuits & Gravy
We will admit to a strong junk food addiction here at Bacon Today. When we don’t have giant trays of bacon to snack on, we often have snacks lying around like lemonheads, Fritos, Nerds, Red Vines, Sour Patch Kids and an office favorite: Doritos! We love coming up with recipes featuring our fav snack foods. Even though we reached Doritos + Bacon nirvana with our Doritos Fried Bacon, we decided we could do better. And so we created these Doritos Bacon Biscuits. Flaky, fluffy homemade biscuits filled with crispy bacon and Doritos bits. Yes indeedy! These are delish on their own, right out of the oven and slathered with butter. Or use them as buns for a bacon sandwich. Mmm hmm.
2 cups nacho flavored Doritos (crushed)
½ cup cooked bacon, finely chopped
2 cups all purpose flour
2 ½ tsp. baking powder
½ tsp. baking soda
Dash of salt
1 Tbsp. white sugar
½ cup butter
¾ cup soured milk (add 1 Tbsp. of white vinegar to ¾ cup whole milk)
Preheat oven to 400° F and line a baking sheet with parchment paper. In the bowl of a stand mixer with the paddle attachment mix the flour, baking powder, salt, baking soda, and sugar for 30 seconds.
Cut in the butter until mixture resembles coarse crumbs. Add in the Doritos and bacon bits and mix for 15 seconds. Mix in the soured milk, then turn onto a lightly floured surface and knead for 2 minutes.
With a rolling pin roll into ½ inch thickness and cut with a cookie cutter. Place on prepared baking sheet, and bake for 15 min.
