Bacon Chocolate Pound Cake
Did you know that pound cake gets its name from the fact that a pound of butter is used to make it? Pound cake is so beloved, that it has its own food holiday: National Pound Cake Day! On March 4th, people will be busting out a pound of butter to make this favorite dessert. With only a handful of ingredients, it is easy to make and a definite crowd pleaser.
Of course, we had to improve the traditional pound cake recipe by adding candied bacon and chocolate chips. Imagine a slice of buttery pound cake, with chocolate and sweet candied bacon added to the mix! Mmm! This pound cake tastes great with a cup of tea or coffee.
2 cups unsalted butter
1 tsp. almond extract
1/2 tsp. salt
4 cups powdered sugar
4 cups sifted cake flour
6 strips of candied bacon, chopped coarsely
2 cups semi-sweet chocolate chips
Preheat oven to 350° F. Cream the butter, then beat in sugar gradually until well blended. Add eggs, one at a time, then add extract. Gradually beat in combined flour and salt until well blended. Add chopped candied bacon and chocolate chips. Directions on how to candy bacon can be found here.
Spread in greased 12 cup Bundt pan or 3 small loaf pans. Bake for 65-70 minutes. Cool in the pan or on a wire rack for 15 min. Invert onto rack and cool completely. Dust with
