Maple Bacon Fatty Granola

Granola is considered to be a hippie dippy, hipster type of food associated with vegetarians and people who wear Birkenstocks. This recipe for Maple Bacon “Fatty” Granola is definitely not for vegetarians! Made with bacon and bacon fat, it’s a delicious snack for any healthy (or unhealthy) bacon fan. You can pretty much use whatever combo of nuts, seeds and dried fruit you prefer.

If you need ideas for homemade holiday bacon gifts, this recipe is perfect! It doubles easily depending on how much you would like to give. This recipe as is made one medium bag. For gift giving, your local craft store sells bags, mason jars and an assortment of Christmas ribbons. After the granola has cooled, scoop the granola into your preferred vessel. Tie the bag or seal the mason jar and adorn with a festive ribbon.

Ingredients:

4-6 slices cooked, chopped bacon
2 cups uncooked oatmeal
1/2 cup sunflower seeds
1/2 cup sliced almonds
1/2 cup flax seeds
1/2 cup dried fruit medley
1/3 cup coconut oil
1 tbsp. bacon grease
4 tbsp. pure Maple syrup
1/4 tsp. salt
1 egg white

Instructions:

1. Preheat oven to 325° F.

2. Combine oatmeal, sunflower seeds, flax seeds, almonds, dried fruit and salt in a bowl. In a small bowl, mix the Maple syrup, coconut oil and bacon grease together. Pour liquid mixture into the dry and stir to combine.

3. Whisk an egg white until frothy and add to granola, stirring again.

4. Line a baking sheet with parchment paper and thoroughly grease the parchment paper. If you don’t use enough cooking spray, the granola will stick to the paper as it bakes. Spread the granola evenly in a thin layer on the baking sheet. Use a 2nd sheet if needed.

5. Place in the oven and bake for 35 minutes until golden brown. Allow to cool completely before packaging in your preferred gift giving method. Or store in an airtight container if it’s all for you. Enjoy!
