This recipe is from Adam Wright of TheWrightSauce.com. It combines pork, bacon, apples, and a bacon BBQ sauce to create a sweet and savory main dish that is suitable any time of year. Serve with roasted potatoes, a green salad, garlic bread and your favorite beer or white wine.
1 pork tenderloin
1 lb. thick-cut bacon
1 Red Delicious apple (or try using a Honeycrisp apple for a sweeter taste)
Montreal steak seasoning
Basil and oregano
The Wright Sauce Honey Apple BBQ Sauce
1. Bake thick-cut bacon at 375° F for 17-20 minutes. Reduce oven temp to 350° F.
2. Cut tenderloin down the middle, but not all the way through. Chop up bacon and Red Delicious apple into small chunks. Season pork with Montreal steak seasoning, oregano, and basil.
3. Line center of pork with the bacon and apple. Drizzle honey on top. Wrap tightly with cooking twine and coat with Honey Apple Bacon BBQ sauce.
4. Place in oven for about 45-50 mins. Cook until center temp of 165°. Coat with more Honey Apple Bacon BBQ sauce. Enjoy!
