Warm Spinach Salad with Bacon Vin

We not only love bacon, but we also love chefs who like to use bacon in their recipes. And this particular chef has made a salad with a bacon dressing. You’ve probably heard of bacon ranch dressing… However, he has created a bacon vinaigrette. Delish!

You may have heard of this gentleman. Keegan Gerhard has long been a television staple from the Discovery Channel to the Food Network. He regularly serves as Emcee and Host of the live Food Network Challenge on TV and he organizes and serves as M.C. for the “The National Pastry Team Championships” and “The World Pastry Team Championships” in Las Vegas. He also brings his pastry skills to D Bar Desserts in Denver. And with the success of D Bar and a passion for the city of San Diego, Gerhard is excited to introduce the art of D Bar to San Diego.
With this bacon recipe, you can get a taste of his culinary skills. Try this recipe out for yourself!

Bacon Vin

Ingredients:
Bacon 50 slices chopped
Onions 2 large diced
Garlic 1/2 cup minced
Red wine vinegar 2 cups
Brown Sugar 1 cup
Salt 2 Tablespoons

Method:
Render bacon
Add onions and garlic when bacon is fully cooked
When onions are translucent add brown sugar and salt
Finish with Red wine vinegar
This will not emulsify permanently

Candied Onions
Ingredients:
Red Wine Vin 3 Cups
Red Wine 2 Cups
Sugar 1 Cup
Red Onions 2 cups

Method:
Julienne the onions
Place all ingredients in pot and simmer until onions are soft and bright in color
Strain onions and cool, set aside
Continue to simmer liquid until it thickens like syrup

Spiced Pecans
Ingredients:
Chili Powder 1 tablespoon
Cayenne 1 teaspoon
Salt 1 tablespoon
Pepper 1 teaspoon
Brown Sugar 2 tablespoons
Oil 1/4 cup

Method:
Preheat oven to 350
Toss all ingredients into mixing bowl
Spread on sheet tray and bake for 10 minutes
Stir all ingredients for three minutes

Warm Spinach Salad

Ingredients:
Bacon Vin
Candied Onions
Spiced Pecans

Method:
Take 2 cups of spinach tossed with 2 oz of the Bacon Vin.
Top with Spiced Pecans, Candied Onions, and Gorgonzola
