Luca Chocolate – Bacon Candy

I am always approached with all things bacon, and I received a call from a company that produces fresh chocolates with unique flavor combinations using high quality, all natural ingredients. I will be honest that didn’t get my attention until she said, “It is our goal to bring cutting edge flavors and technologies to the chocolate industry, and deliver them to you as soon as they’re made.” And I said, “Yeah so?” and she said, well we have several new limited edition products including bacon covered chocolate.” Now she had my attention and I immediately ordered a box!

This company is called Luca Chocolate which is based in North Carolina. In speaking with them I learned that their chef and owner studied nutrition in college and went to the French Culinary Institute to study Classic Pastry Arts. The idea of LUCA Chocolate began officially in December 2006. What started off as a simple idea in the home kitchen and a lot of experimentation with many pounds of sugar, pints of cream and tablespoons of butter created a now successful business!

At this point I am sure each of you want to know what does chocolate taste like when paired with bacon? It’s pretty darn good. It’s sweet, and salty, and a little smoky and really something you might just need to try.

They offer several options including: Bacon Caramels: 4 of our signature caramels, topped with a crisp piece of bacon and covered in your choice of milk or dark chocolate and a sprinkle of sea salt. The box includes 8 pieces of chocolate covered bacon, 4 bacon caramels, and 2 bourbon and black pepper truffles. There’s also a big box (that’s one whole pound) with double the amount of chocolatey-bacon goodness.

The owner of Luca Chocolate said that she would rather have one amazing piece of chocolate than a whole box full of something mediocre. With my candies, I hope I can re-create that for someone else. I’m trying to find that balance between unique flavor combinations and classic ones. I don’t want them to be overpoweringly rich, but I’d like to find that a person savors each piece, instead of eating them quickly.

Raspberry Jelly Doughnut – Sweet bacon filled with fresh raspberries, dates and crunchy, raw almonds and dusted with snow white powdered sugar from the bacon fairy princess. Sticky and delicious!

S’mores - No camp fire necessary, just a burning desire for chocolate, graham crackers, marshmallows and our little twist – chocolate hazelnut butter. Bacon Moon Pies

This creation deserves to go directly into the OMG – I WANT IT category.

Bacon Moon Pies. Three words that should make your taste buds stand up and shout. Rob, a confectioner from Northern California has come up with what may be one of the greatest bacon desserts of all time.

Rob says in order to create these amazing treats he must “render the fat out of the bacon and use it in place of butter fat in the shortbread and in the caramel so the flavor is extra intense.” This isn’t any ordinary shortbread, this is traditional Scottish shortbread made with bacon fat, stone ground rice flour, and bacon cracklin. Between two pieces of the shortbread Rob places “a marshmallow made with Vermont maple syrup and Evan Williams Single Barrel Vintage Bourbon, surrounding a bacon fat and bacon cracklin caramel.”

And as if that’s not enough, “the whole thing is coated with a thick layer of my favorite blended chocolate, Michel Cluizel’s 72% dark.”

Wow. Heaven in the shape of a moon pie.

Bacon Peanut Brittle

Denise S. from Wasabi Prime shared with us this curious little candified concoction called Bacon Peanut Brittle. Available from the quirkily logoed Sir Francis Bacon Shoppe, the candy appears to be something worth trying.

Denise reports that the Bacon Peanut Brittle is “pretty smoky and unique in flavor. Definitely to be enjoyed in small doses, as it gets overwhelming, but I think it would be quite marvelous crumbled up over vanilla ice cream.”

Caffinated Bacon Lollipops

Lolliphile packs a plethora of pucker into their wide variety of lollipops. They make absinthe, white russian, and wasabi-ginger to name a few. What we’re after though is bacon and they not only offer a bacon lollipop, they offer it with a kick of caffeine!

Here’s another San Francisco-based bacon food. This time it’s in the form of a sugary, lickable sensation called the maple bacon lollypop. What this treat lacks in creative naming it more than makes up for in creative cooking – after all, if it’s okay to eat bacon with pancakes and syrup, then why not slather the bacon itself in syrup and jam a stick in it?

Mo’s Bacon Bar – A Las Vegas Treat

Featured in this month’s AAA Westways magazine is Vosges Haut-Chocolat, a boutique chocolate lounge at the Forum Shops at Ceasers Palace in Las Vegas, NV. While we’ve reported on chocolate covered bacon before here at Bacon Today, we had to tell you about this delicious treat after AAA magazine called Mo’s Bacon Bar “a chocolate bar containing morsels of salty, crisp bacon,” and “…the pinniacle of culinary achievement.”

We traveled to Las Vegas this weekend and sampled this tastey treat and wholeheartedly agree.
