Rubios has been one of my favorite places to grab a quick bite for more than two decades. In fact, I used to frequent the original location in Pacific Beach, CA. As a fast food and bacon connoisseur I could not help but feel utter joy when I noticed a common theme on Rubios new Grilled Gourmet Taco Menu.
Grilled Chicken — Corn tortillas topped with toasted cheeses, habanero citrus salsa, grilled chicken, crisp bacon, cilantro/onion, cotija cheese, creamy chipotle picante sauce and avocado slices.
Sirlion Steak — Corn tortillas topped with toasted cheeses, habanero citrus salsa, grilled sirloin steak, crisp bacon, cilantro/onion, cotija cheese, creamy chipotle picante sauce and avocado slices.
Garlic Herb Shrimp — Corn tortillas topped with toasted cheeses, habanero citrus salsa, grilled garlic herb shrimp, crisp bacon, cilantro/onion, cotija cheese, creamy chipotle picante sauce and avocado slices.
It appears Ralph Rubio has deemed bacon a gourmet item. So shall we all from this day forth!
Considering it boasts the best carnitas one can devour in a fast-food-chain-type Mexican Grill restaurant, Rubios has truly proven itself to be a proud pork peddler.

I’m glad to hear that Rubio’s Mexican Grill now finds itself to be a “Triple P” (Proud Pork Peddler). We need more of those in the world!
