“Arrrr … me matey and shiver me timbers,” there’s a certified “Baconista” out there preparing some might fine bacon recipes for the rest of us “Baconquistadors” searching high and low, far and wide for some treasured bacon booty.

His name is  John MacDonald and he most definitely is a true “Baconnoisseur,” dedicating both himself and his website “Bacon Recipes“  to only the very finest, most delightfully delicious bacon recipes available on this planet.

The truth is; John has a lot of great recipes, but the one that he will have 100 ft tall Golden Statues dedicated to him around the globe is his world famous “Bacon Wrapped Fish Fillets.”

Here’s John to walk you “step by simple step,” through the creation of this consummate culinary celebration:

Bacon Wrapped Fish Fillets

This extremely well-rounded, BBQ, bacon wrapped fish recipe is overflowing with a medley of flavors that make your mouth water! Savory, smoky, bacon blankets the tender cod fillets, which are stuffed with vegetables, saturating all of it with its delicious, distinct flavor. A quick and easy BBQ recipe, great for guests.  ( Serves 6-8)

Ingredients: 8 (6 ounce) fillets cod

2 tablespoons sesame oil

2 tablespoons chili sauce

8 slices bacon

1 leek, chopped

1 ounce enoki mushrooms

Directions: Preheat an outdoor grill for high heat.

Soak some toothpicks in water while the grill heats up.

Spread a thin layer of sesame oil and chili sauce onto one side of each fish fillet.

At one end, place some of the leek and a couple of mushrooms.

Roll towards the other end.

Wrap each roll with a slice of bacon, and secure with two toothpicks.

Place on the preheated grill, and cook covered for 5 minutes.

Be careful of flare-ups from the bacon grease.

Turn over, and cook for 5 more minutes, until bacon is crisp and fish flakes easily.

Serve and Enjoy!
