We think Chef Rick Bayless is one of the great food innovators around. As celebrity chefs go, he’s a pioneer in educating American home cooks—and many cooks abroad—about the true regional cooking styles of Mexico.
Bayless also owns and runs a few of the finest restaurants in the United States. Don’t believe us? Just stop by Frontera Grill, Topolobampo or XOCO the next time you’re in Chicago. Sit down, order a tequila cocktail and a few plates of food, and just try to tell us it isn’t delicious.
If all that weren’t enough, Bayless also contributed to the Bacon Cookbook, a sweet collection of recipes and tips about our favorite meat candy. Earlier this year he was on ABC’s Good Morning America to demonstrate his version of Bacon and Tomato Guacamole.
That’s right. It’s as amazing as it sounds. Even if you’re normally lukewarm on avocados, try this amazing guacamole just once as an appetizer or party dip. Something about the sweet, salty flavors of a smoky bacon (hint: you can buy great ones here) latch onto the luxurious fats of the mashed avocados. And both marry perfectly with juicy tomatoes, fresh cilantro and lime juice. Mix them according to Rick’s recipe and you’ve got the perfect pairing for a fresh margarita or Mexican beer.
