Quite some time ago, Lloyd and Lauren introduced us to Mat. No, not a guy who’s name is short for Matthew. This Mat is crisp, delicious and 100% bacon. He’s woven of the finest meat known to man and is as versitile as he is tasty.

Now, we’ve woven our own bacon mats since Lloyd and Lauren first introduced us to them. We’ve made tacos, polenta, and even a cheese log with the glorious weave of bacon, but they’ve even gone so far as to collect a gallery of bacon mats to share with the world.

If you’re in the Pittsburgh area then this story is for you. If not, then read on anyway, because someday you might be. 

According to Maria T., “Harris Grill in Pittsburgh has complimentary bacon on Tuesday nights from Happy Hour until close.”

I say again, Harris Grill has FREE BACON on Tuesdays. 

Here’s how I see it: You’re in Pittsburgh, driving home from work, and your husband/wife/friend is on the phone with you and says, “I’m glad it’s already humpday tomorrow.”

“Hump Day tomorrow?”, you think to yourself out quiet. Hmmm… That must mean that today is Tuesday!

One second you’re cruising down Forbes, trying to get the f%@k out of Downtown. Next thing you know, you’ve diverted via Beeler-Wilkins-Shady to get to Ellsworth, where you’re just a stone’s throw away from free bacon at the Harris Grill.

But that only works if you happen to be in Pittsburgh. The rest of us are screwed.

The Maillard Reaction – The Science of Bacon

There was some scientific discussion a few months ago that discussed the possible link between bacon and hangover cures. The connection had something to do with amino acids and their reaction with something or other in the body. (Very scientific, I know.)

There’s a new study now that expands even further on this concept and begins to explain why we like bacon in the first place. The story from the Telegraph includes the following tibit:

At the centre of it all is the Maillard reaction, a chemical reaction between an amino acid and a reducing sugar which often requires heat. The acid and sugar react to release a huge amount of smells and flavours.

This could mean that bacon is not a choice, but a way of life that’s hard coded into our DNA. 

Stop denying the bacon love that lives within and start to shout the love without.

One of our roving reports on the ground in Las Vegas sent us this spy photo from Albertsons grocery store. Looks like they’re offering Bacon Cheddar Pub Burgers by the patty. Drool.

We didn’t get a chance to try these yet, nor have we confirmed whether this is a national offering for Albertsons grocery store. So, we put the power in your hands good readers of Bacon Today. sunrise-00This morning I hopped on the motorcycle with no particular destination in mind. I was hungry and wanted to ride along the coast so I figured I stop when I saw something interesting.

After riding along with various other bikes down Pacific Coast Highway, I spied one of the few small restaurants that was open on the Memorial Day holiday. Sunrise Cafe is a rather unassuming building with outdoor seating along two walls. The place was packed with patrons and I grabbed one of the few empty tables still available in the early morning.

Looking over the menu there were many bacon-infused options to choose from. Breakfast burritios in the wet or dry vartiety, special breakfasts with sides of bacon, and much more.

I chose the Sunrise Special. A good deal at $7.95 for two pancakes, two eggs, hash browns, and four slices of bacon. With my orange juice in hand I waited for my meal to arrive as I watched the cars drive by along the bustling Pacific Coast Highway.

I was definitely not disappointed. The entire meal was great. A classic American breakfast with all the right elements and just the right amount of preparation. The bacon was hot & crispy with just the right amount of grease.

Bacon Imitates Art

Bacon Imitates Art

We have never mentioned Sir Francis Bacon on this site before today. Go ahead and do a search in the box above. Sure, if you type in “Francis” and click “search” you’ll get seven or eight article returns, but those will all be articles that mention “San Francisco”. We made a conscious decision about a year ago that this site would be dedicated to all the best news about bacon and not about people named bacon. With the exception of a couple of relevant stories about actor Kevin Bacon, we have held true to that decision. 

Finally, though, we have found a topical story about the famous Sir Francis Bacon. Glasstire’s Roy Neinast had a serious eureka moment while he was looking for a unique angle on the whole swine flu thing. As an online journal of visual art in Texas, Glasstire writers are always seeking out great bits of art to write about. This side-by-side comparison of the art of Sir Francis Bacon to the Food of Bacon is really clever. Granted, it doesn’t really represent the visual art of the Great State of Texas, but it sure is creative, and we support that.

In January I shared an exploration of bacon tofu with you and, based on available evidence, was able to conclude that bacon tofu is not a reasonable product.

What I’m going to share with you today takes the proof of this theory eleven steps further. Thanks to the Houston Press, we now have eleven very convincing reasons to elevate our love of the candy of meats.

We travel the world in search of great bacon. We search high and low for meals that charge the senses and tease the taste buds with mouth-watering anticipation.

Sometimes, we’re early for a flight and we’re just plain hungry. Such was the case on a recent trip through Indianapolis. We found ourselves about an hour ahead of schedule and plenty ready for a hearty breakfast if one was to be found at the Indianapolis airport (IND).

There was a small coffee shop of the corporate-infused-latte variety and a chain restaurant called Champps. We opted for the chain restaurant as the baristas over at coffee central didn’t look like the proud servers of bacony goodness.

We sat down and ordered our meal. A good old-fashioned American breakfast. Two eggs, two pieces of toast, two strips of bacon, a fruit cup, and fried potatoes. Sounded like just what we needed to kick start the last leg of our journey.

We couldn’t have been more wrong. The eggs were bland, the toast was stale, the fruit not fresh, the potatoes tasteless, and the bacon…awful. We could have put up with the poor taste of all the items on our plate but not the bacon. The poor pork was the consistency of cardboard left out to dry on a hot summer day after being soaked the previous night in a tub of stale bathwater. What had the potential of being salty, tasty meat candy was now more like red garden clay. So sad, so tragic, and no where near the happy breakfast we had hoped would guide us through the rest of our day.

This waste of a meal earns a Smaste™ rating of 2.0. That’s right, two. and the two is for the butter. At least that was good. We ate it with a spoon.

A week or so ago, a BT reader wrote us and said that he had discovered a cocktail that tasted like bacon. We looked into this drink, and wrote an article about the glorious possibility that it could be real.

And then we tried it.

It sounds so innocent – mix coconut milk 4:1 with tequila…

This drink tasted more like a smoking engine than bacon. This really makes me wonder if I made it right. It tasted sour. I don’t know much about coconut milk – do you?

What I really want to know is if any of you have tried this drink – or any others that you think might taste like bacon. I want to know how to make a shot that tastes like bacon – without using bacon vodka or any actual bacon. Nothing infused with bacon. Just regular old off-the-shelf booze. Classic stuff. Tequila, rum, frangelico, etc, whatever.

Okay… back to business. I need to rate the coconut milk/tequila/lime combo. Drumroll, please…

Certain things should not be consumed. This is one of them.
